Lighter take on a classic



Last night we made a classic light!

Our dinner consisted of a turkey meatball sub with a side of green beans. It was delicious and satisfying without the guilt. Check out our lighter take on this classic below.

Turkey meatballs:
1 pound of 99% fat free turkey breast
Parsley
Oregano
1 egg
Whole wheat breadcrumbs

*Combine the ingredients above and lightly sprinkle with salt and pepper. Use a spoon to make small meatballs and line a baking sheet. Broil for 10 minutes (time varies - depends on your oven).

Once the meatballs are cooked, place them in whole wheat sub bread, spread fresh tomato sauce over the meatballs (no salt added sauce is best), sprinkle basil on top, and then finish by topping them with reduced fat provolone cheese. Bake in the oven for 1-2 minutes or until cheese melts.

Green beans:
Steam 1 package of green beans, add 1 tablespoon olive oil and top with some salt and pepper.
