Memorial Day Potato Salad

This weekend marks Memorial Day Weekend and many will celebrate with barbeque or a day at the beach. Whether you are throwing the party or attending a party, a great potato salad is a staple side dish.

We like Martha Stewart's basic potato salad.

Serves 8
Coarse salt and ground pepper
3 pounds waxy potatoes (such as Yukon gold or new), scrubbed and cut into 3/4-inch cubes
1/3 cup white-wine vinegar
4 scallions, white part minced, green part thinly sliced
3/4 cup light mayonnaise

For an alternative twist on the basic potato salad, we recommend the Farmer's Market Potato Salad.

Yield: 6 servings (serving size: about 1 cup)
Ingredients
1 cup fresh corn kernels (about 2 ears)
2 pounds fingerling potatoes, cut into 1-inch pieces
2 1/2 tablespoons olive oil, divided
2 tablespoons chopped fresh tarragon
2 tablespoons cider vinegar
2 tablespoons whole-grain Dijon mustard
1/2 teaspoon hot pepper sauce (such as Tabasco)
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
Cooking spray
3/4 cup vertically sliced red onion
3/4 cup diced zucchini
1 cup cherry tomatoes, halved
