Get Back on Track for the Work Week






After a relaxing weekend it is important to start the work week off right. We try to rejuvenate and prepare ourselves for the busy week ahead by eating a healthy and energizing breakfast. We don't have a lot of time on Monday morning, so we try to prepare a healthy breakfast Sunday afternoon. 

Our recommendations to start your week off right...

Old-fashioned Avena Oatmeal Breakfast Smoothie 

1 cup old-fashioned oatmeal
6 cups milk, plus more if needed
2 tablespoons to 1/4 cup sugar
1 teaspoon vanilla extract, optional

Place the oats and milk in a medium saucepan over medium-high heat and bring to a rapid simmer. Reduce the heat to medium-low and cook, stirring constantly, until the oatmeal is thick, about 10 minutes. Add sugar, to taste, and set the oatmeal aside to cool slightly.

Transfer the oatmeal to a container and refrigerate it for at least 2 hours or overnight. Strain the liquid, add the vanilla and add more milk if you want it thinner. Serve cold.

Berry Mint Salad

1 cup fresh strawberries
1 cup fresh raspberries
1 cup fresh blueberries
1/2 cup fresh mint leaves
1 teaspoon orange juice
1 banana, sliced
1/4 cup maple syrup
1 teaspoon vanilla extract

Place the strawberries, raspberries, and blueberries in medium glass bowl. Add mint leaves and liquid ingredients and toss. Place fruits in serving bowl and place banana slices on top.
