PASTA SUBSTITUTE*

Want spaghetti without all the heaviness/carbs? Well so do we...and we're urging you to try spaghetti squash for dinner tonight! Visit your local grocery store and buy 1 spaghetti squash.

Boil for about 30 minutes, let cool, and cut in half. Now the fun part...start scooping! That's right, just like a pumpkin, scrape those seeds. Once you get rid of the middle, the rest of what you scoop you can keep! Use your fingers or a spoon and literally just start scraping out each side- the squash will pull out as strands that resemble spaghetti!

I like to throw it in a large bowl and top with turkey meat sauce (lean ground turkey, Emeril's Kicked Up Tomato sauce, mushrooms, and seasonings). Top with a little Parmesan and VOILA- gourmet dinner for 2, 3, or 4 AND it's healthy! Enjoy our new favorite meal*
